National Peanut Butter Lover’s Month
I was recently reminded that November is National Peanut Butter Lover’s month. It’s really no trouble for me to write an ode to peanut butter because I love it so much. In fact, if I was asked to pick a single favorite food item (as opposed to a favorite genre of food) it would be peanut butter. These are the existential questions food-loving dietitians ask themselves….Peanut butter is the perfect blend of protein, fat, and deliciousness. Plus, it goes with everything. You think I’m wrong? I’ve thought this through.
Peanut butter as a savory sauce for stir-fries and meat dishes. Amazing.
- Peanut butter on sandwiches. Duh.
- Peanut butter as spreads for fruits and veggies. Perfection.
- Peanut butter swirled into smoothies. Heaven.
- And don’t get me started on peanut butter desserts. Have you eaten a Reese’s Peanut Butter cup? Or even better, a Reese’s Egg at Easter or Pumpkin at Halloween?
If you have a peanut allergy, my condolences. I’m truly very sorry.
The other day I ended up creating the most delicious smoothie and thought I would share it with you. You can drink it for breakfast, a snack, or dessert. It’s basically magic in a glass, so you can thank me later. And by the way, I don’t actually measure things when I cook so these measurements are sort of made up. You may need to tweak it a bit.
Marci’s Almond Milk, Peanut Butter, Date, Cinnamon, Banana, Magical Smoothie
8 oz almond milk
1-2 T peanut butter
2-3 dates
½ large frozen banana
Hearty dash of cinnamon
Blend and enjoy!
